The fruits of choice for this dish are inspired by the traditional festive colours of xmas – delicious red strawberries and kiwi fruit.

Normally fruit parfaits are made with granola, but I have eliminated the high-energy carbs, so we can enjoy this throughout the festive season, anytime of the day!

A simple parfait to make, low in fat, rich in protein and tastes heavenly. It’s perfect for breakfast, or even as a dessert.
