It’s jammed packed with protein and nutrition. Best of all you can make it in 5 minutes. The CK comes from the 11 plant foods that start with the letter ‘c’ or ‘k.’ As a result of all ingredients starting with the same sound, makes the shopping list real easy to remember.
|kidney beans, canned||1 x 400g can|
|chickpeas, canned||1 x 400g can|
|cannellini beans, canned||1 x 400g can|
|corn kernels, canned||1 cup|
|cucumber, continental, fresh||1/2|
|red onion (not a c/k food but it is chopped!)||1|
|capsicum, red, fresh||1|
|celery stalks, (include leaves)||3|
|olives, kalamata, pitted, sliced, jar||50 g|
|coriander leaves, fresh||1/2 cup|
|cheese, feta, low-fat||90 g|
|Note - other cheese choices, low-fat cheddar or mozzarella cheese!|
Place all beans and corn into a sieve / colander. Rinse thoroughly and drain well. Transfer into a large salad bowl.
Dice carrots and cucumber and finely chop onions, capsicum and celery. Drain olives, loosely chop coriander leaves and cut feta cheese into small cubes.
Add all ingredients to the salad bowl and mix together well. Plate up and enjoy.
- Enjoy as a complete meal on its own, and / or makes for a great side-dish for other meals.
