Can you really cook an authentic, full-flavour Chili Con Carne in 10 mins? You bet! Just follow my easy steps, your family and friends will think you've been cooking for hours!
|beef mince, ground, extra lean||500 g|
|onion, brown, fresh, chopped||1|
|chillies, red, fresh, finely chopped||2 tbsp|
|taco seasoning, salt-reduced||1/2 pkt|
|diced tomatoes, canned||400 g|
|kidney beans, canned||400 g|
|corn kernels, canned||1/2 cup|
|coriander leaves, fresh, chopped||1/3 cup|
|taco sauce||325 mls|
|canola oil cooking spray|
|cracked pepper||to season|
Heat frying pan and spray with oil. Add mince, onion, chilies and sprinkle with 2 tbsp of the taco seasoning. Cook until meat has browned. Add tomatoes, kidney beans and juice, corn and coriander.
Pour taco sauce over chili mixture and stir in the rest of the taco seasoning. Cover and cook on medium heat for 5 minutes. Stir frequently. Add cracked pepper and serve immediately with a salad.
- To warm things up, add jalapeños or 1 tsp of dried chili flakes.
