Preserved lemons, are salt-cured / fermented lemons. They are intensely fragrant and add a pleasant salty, lemony note to any classic Moroccan, Middle Eastern dish, stew or tagine. The brine can also be seasoned with spices like cloves, cinnamon quills and coriander seed.
Added to dishes or as a garnish, preserved lemons are essential to the cooking of tagines. You can buy jars of preserved lemons from specialist shops or supermarkets, or you can make you your own.
