All it takes for the TCB Beef Ragout is a budget cut of beef, simple pantry ingredients, and a little bit of patience, the end result is a delicious, comforting meal with tenderized meat that just falls apart.

The beauty of slow-cooked meals is that they require minimal prep, and once the ingredients are in the pot, you just switch it on and leave it to simmer all day.

baby summer / button squashes, ends removed, chopped4
diced tomatoes, canned2 x 400g cans
beef stock, liquid, salt-reduced150 mls
paprika, ground1 tsp
thyme, dried1 tsp
oregano leaves, dried1 tsp
cannellini beans, canned, drained, rinsed1 x 400g can
rock salt & cracked pepper to season
parsley, flat-leaf, fresh, chopped to garnish

  1. Place meat into the slow cooker's ceramic bowl. Add garlic, onion, celery, carrots, squash, and cauliflower florets.

  2. In a large jug, add tomatoes and stock. Stir in herbs – paprika, thyme, oregano, and cannellini beans. Pour over meat and vegetables in the pot. Season with salt and pepper. Cover set the temperature on LOW and cook up to 8-10 hours.

  3. When cooked, plate up, garnish with fresh parsley sprigs, and serve.
