|garlic cloves, crushed||4|
|brown onion, chopped||2|
|celery, stalks, fresh, sliced||3|

|baby summer / button squashes, ends removed, chopped||4|
|diced tomatoes, canned||2 x 400g cans|
|beef stock, liquid, salt-reduced||150 mls|
|paprika, ground||1 tsp|
|thyme, dried||1 tsp|
|oregano leaves, dried||1 tsp|
|cannellini beans, canned, drained, rinsed||1 x 400g can|
|rock salt & cracked pepper||to season|
|parsley, flat-leaf, fresh, chopped||to garnish|
Place meat into the slow cooker's ceramic bowl. Add garlic, onion, celery, carrots, squash, and cauliflower florets.
In a large jug, add tomatoes and stock. Stir in herbs – paprika, thyme, oregano, and cannellini beans. Pour over meat and vegetables in the pot. Season with salt and pepper. Cover set the temperature on LOW and cook up to 8-10 hours.
When cooked, plate up, garnish with fresh parsley sprigs, and serve.
