All the taste, flavour, and satisfaction of bacon & eggs without the high fat & calories in one super convenient serving. Ideal for breakfast, or any meal of the day. Make batches and freeze the kids will love em!
|canola oil cooking spray|
|egg whites, liquid||2 cups|
|eggs, whole, fresh||2|
|skim milk||1/4 cup|
|paprika, ground||3/4 tsp|
|red capsicum, fresh, deseeded, finely chopped||1|
|onion, red, fresh, chopped||1|
|bacon rashers, short-cut, rindless, chopped||4|
|baby spinach leaves, fresh, washed, chopped||2 cups|
|cracked pepper||to season|
|cheese, mozzarella, low-fat, grated||50 g|
Set oven at 190°C to heat. Using a blender or food processor, blend eggs, egg whites, milk, and paprika together. Transfer egg mixture to a medium mixing bowl. Add all chopped ingredients except the cheese, and season with pepper. Mix well.
Lightly spray a large 12 cupcake/muffin-baking tray with oil. Spoon mixture evenly into the individual cupcake/muffin compartments. Top each one with cheese. Bake for 12-15 minutes until the egg mixture has set. Serve warm.
