canola oil cooking spray
egg whites, liquid2 cups
eggs, whole, fresh2
skim milk 1/4 cup
paprika, ground 3/4 tsp
red capsicum, fresh, deseeded, finely chopped1
onion, red, fresh, chopped1
bacon rashers, short-cut, rindless, chopped4
baby spinach leaves, fresh, washed, chopped2 cups
cracked pepper to season
cheese, mozzarella, low-fat, grated50 g

  1. Set oven at 190°C to heat. Using a blender or food processor, blend eggs, egg whites, milk, and paprika together. Transfer egg mixture to a medium mixing bowl. Add all chopped ingredients except the cheese, and season with pepper. Mix well.

  2. Lightly spray a large 12 cupcake/muffin-baking tray with oil. Spoon mixture evenly into the individual cupcake/muffin compartments. Top each one with cheese. Bake for 12-15 minutes until the egg mixture has set. Serve warm.

  3. These flavorful savory cupcakes can be made ahead; just reheat in the microwave for a quick meal.

  4. TCB Tips:

    - Ideal for breakfast, mid-morning, or mid-afternoon snack, and are great for the kid's lunchbox.


    - Can be eaten warm or cold. Warm in the microwave for 15-20 seconds.


    - Refrigerate up to 3-4 days in an airtight container, and can be frozen up to 1-2 months.
