Garbanzo Lemony Spread
What You Need:
4-5 stalks of celery, 20 cms long
2 spring onions
juice of 1 freshly squeezed lemon
1-2 tbls mayonnaise
1 large handful of rocket leaves, washed
2-3 tbls of fresh dill leaves
1 garlic clove / 1 tsp minced garlic
small handful of curly parsley, washed
1½ cups of garbanzo beans (chickpeas) washed
What To Do:
Place all ingredients into a blender / food processor and process until blended. Cover and refrigerate until ready to use.
Alternately, place chickpeas into a medium sized mixing bowl and mash with a fork or potato masher until smooth. Finley chop all other ingredients – celery, rocket, parsley, garlic, onions and dill and mix in with mayonnaise and lemon juice until well combined.
